Yolky Cafe Latte Recipe

It's 2023 babes- it's time to weave nourishing traditions with our modern ways. And so, that is why my Yolky Cafe Latte is making coffee WORK for me.

I think folks are surprised to hear that an herbalist drinks anything other than tea- which couldn't be further from the truth. Coffee is LIFE. I've been obsessed since a teen, even working at Starbucks as a barista on and off for about 6 years.

Developing my own recipes and hacks isn't new- so it makes total sense that now, at this stage of my life as a busy mama and entrepreneur, I need to make coffee work for ME (and not me and my body, working for it!)

The truth is, is that over the first few hours of becoming a parent, I have zombie walked down to the kitchen with one eye open to make a cup to start my day. But the reality is (and what I have learned from experience) is that a cup of joe on an empty stomach first thing in the morning was SENDING me- and not in a good way. Drinking coffee on an empty stomach was causing me so much anxiety- but I was in total denial because as you might be able to relate, coffee is what got me going in the morning.

That was until the dots connected, and I remembered that drinking coffee first thing before a meal was spiking my blood sugar and stress hormones. So, the good news is that coffee itself wasn't necessarily wasn't the one causing my anxiety- it was the fact that I wasn't nourishing my body with a meal first to keep my blood sugar and hormones regulated before/at the same time. 

So what about for those of us who either a) dont have the time to make a meal in the morning or, b) don't feel like eating first thing upon waking? 

Enter: The Yolky Cafe Latte.

 I know you might be thinking- girl, you're crazy. But trust me, this is a perfect way to use functional foods to get a boost of protein, essential fertility super nutrients from the best (and most nutrient dense) part of the egg- the yolk. 

Benefits of Egg Yolks:

  • Egg yolks contain hormone and immune system supportive vitamins A, D, E and K, Vitamin D, B12 along with omega-3 fats.

  • Egg yolks are the most concentrated source of choline, a key component of acetylcholine-one of the brain's key neurotransmitters. During pregnancy and breastfeeding, an adequate supply of choline is particularly important, since choline is essential for normal brain development.

  • The yolks are also packed with tryptophan and tyrosine, and amino acids that help prevent heart diseases.

Combine this with collagen, a great source of skin healing, gut sealing protein, anti-inflammatory maple syrup, and mushroom (any medicinal mushroom will do- I choose to use Micro Magic as apart of my microdosing regime), coffee/espresso and...You have the most creamiest, nutrient dense cafe latte out there. 

I drink this as my pre-yoga morning fuel, and follow up with breakfast when I feel ready for it- about 2 hours after waking. 

Of course, you can absolutely drink this any time of the day that you would normally drink coffee and benefit from a nutrient and protein boost (this recipe has 11grams of protein!).

And because you're probably wondering- nope! You don't taste the egg in this at ALL!

Did I mention it's simple to make?

Yolky Cafe Latte

  • 1 egg yolk (separate the egg white),preferably pastured + free range
  • 1 scoop of grass fed Collagen Powder (I use the Organika brand)
  • 2 tablespoons of Maple Syrup
  • Optional: 1/8-1/4 teaspoon of mushroom powder (or any other functional mushroom or herbal powder of your choice)

I prefer to make this in my blender, but you can absolutely whisk by hand. Start by separating out your yolk from the whites of your egg. Add your collagen powder and maple syrup and whisk or blend to form a 'custard' like consistency. This step is really important before adding your hot liquid- don't skip it or else you will have a latte with eggy texture. Next, add freshly brewed coffee (about 2 cups) or 2 cups of hot water and a shot (or 2!) of espresso. Blend on high for a few seconds until everything is well incorporated, creamy and there is a nice foam on top. Pour and enjoy!
